The Akita Seishu秋田清酒 brewery, founded in 1913 in Akita prefecture, produces lively, crisp sakes brewed using its traditional methods from mineral-rich water that is rare in other regions.
Its Yamato Shizuku Junmai Ginjô やまとしずく純米吟醸 sake, made from Akita Sake Komachi rice, goes well with simple or complex cooked or raw dishes, and is also a perfect accompaniment to aperitifs.
