Japanese specialty, umeboshi 梅干salted plums are produced from Ume plum, a Japanese plum variety, close to the apricot.
These plums are produced by marinating them in salt hence their distinctive, salty, tangy taste: red shiso (perilla) leaves are then added to give a lovely red colouring. In this version, the shiso leaves are also preserved to coat the soft texture of the plums... a pure delight.
