Japanese made umboshi salted plums
Umeboshi salted plums 梅干are produced from Ume plum, a variety of Japanese plum, close to the apricot.
These plums are produced by pickling them in salt: red shiso (perilla) leaves are then added to give an attractive red colouring.
These umeboshi plums are a Japanese speciality with a particular salty and sour taste.
It is a dietary condiment with multiple virtues recognised and appreciated by the Japanese: antiseptic, fortifying, mineralising, hangover remedy etc...!
