Beni shôga is a Japanese condiment made from thinly sliced red ginger marinated in rice vinegar.
It is traditionally coloured with red shiso leaves or any other vegetable and is often served as an aperitif in Japanese izakaya brasseries.
But it really works wonders on fried dishes: as a garnish for okonomiyaki pancakes, takoyaki octopus dumplings and fried yakisoba noodles, not forgetting lightly fried tempura.
