Gari shoga is a condiment of Japanese origin, prepared from ginger grated into thin strips and marinated in rice vinegar.
Served as is with soy sauce and wasabi, it is a must when eating sushi: it serves to refresh your palate between each bite to better savour the next sushi tasting.
It also goes wonderfully well with tempura and all fried dishes. Cut into strips, you can add it to salads, stir-fried noodles and all rice dishes.
