Oden おでん is a type of Japanese stew that originates from the Kanto region, made up of 7 prefectures including Tokyo, gunma or Ibaraki for example.
Oden is most often made up of fish and vegetables simmered for a long time in a dashi broth. The ingredients differ depending on the region, but frequently include fried soybeans, potatoes, eggs, cabbage, daikon or even slices of konjac.
