The Matcha Tea?? Clearspring Organic originates from Uji, an area in the hills above Kyôto, renowned for producing some of Japan's finest teas. Only accessible by foot, this remote area is unpolluted and rich in insects such as spiders, ladybirds, praying mantis and dragonflies that help keep pests under control.
This organic matcha from Uji is grown under the diligent guidance of tea master Juro Okuda. The tea bushes are covered with webs for as long as possible in the last few months to produce dark green leaves. This stimulates the leaves to produce much more chlorophyll. The best young tea buds are picked, dried and ground in a granite mortar.
It is very difficult to grow organic matcha, pests and diseases have to be fought. Pests can appear due to small climatic changes threatening the tea crop.
For this reason, it is essential to manage the crop in a way that places primary importance on the natural ecosystem.
The Ceremonial and Premium grades of matcha are ground in stone mortars for several hours.
