Sapporo ramen noodles with authentic miso broth
At the very north of Japan, on the island of Hokkaido, each of the major cities (Sapporo, Hokadate and Asahikawa) has its own style of ramen noodles.
Sapporo is where Miso ramen 味噌ラーメン first appeared in the 1960s. The broth is made from tonkotsu (pork bones) and chicken: it is then seasoned with a miso sauce and often covered with oil so that it doesn't get cold in the harsh winters.
