Dense-textured Japanese panko for breadcrumbs and tempura
Panko パン粉 is a typically Japanese breadcrumb and differs from our Western breadcrumbs in many ways:
Produced from breadcrumbs, Panko breadcrumbs are less dense than breadcrumbs with crusts. What's more, the large flakes coat the food less compactly than crumbs, allowing some of the oil or frying fat to drain away (rather than being absorbed).
The resulting breadcrumbs are less greasy, airier, lighter, crispier and crunchier than at home!
