Dried and smoked bonito, katsuobushi in Japanese, is one of the mainstays of Japanese cuisine. It is one of the ingredients of dashi, the broth that is the basis of Japanese cuisine.

Katsuobushi is produced by smoking and then drying skipjack tuna, a fish from the tuna family. The fish thus dried become hard blocks which are then grated into more or less thick chips depending on the use to which they are to be put.

Fine bonito chips, usukezuri (fine cut) or hanakatsuo, are produced from skipjack Katsuwonus pelamis, fished in the Indian Ocean and then prepared in Concarneau. The techniques and know-how imported from Japan, from the town of Makurazaki, in Kagoshima, the Mecca of Japanese real katsuobushi production, allow us to offer the best quality dried bonito.

These fine shavings in a 100g bag are perfect for preparing a dashi broth rich in umami. They can also be used as a side dish by being sprinkled on okonomiyakis, octopus dumplings takoyakis, or fried noodles yakisobas. Fine bonito shavings can also be used in rice balls onigiris or with tôfu.
