This variety of noodles Soba そば is produced in the prefecture of Gunma (former province of Joshu) in central Japan, known for its temperate climate, abundant pure water and the quality of its wheat flour.

Taking its name from the highest mountain in the region, the Akagi producer continues the know-how of making authentic and tasty noodles, according to traditional local recipes and takes care to wrap them in recycled paper.

Soba noodles are Japanese noodles made from wheat and buckwheat flour (the term Soba means Buckwheat) hence their brown colour.  Thin (2mm thick), they are widely eaten in Japan, hot or cold with a 'tsuyu sauce, made from dashi, mirin and sweet soy sauce.

It is a main ingredient insoup, or a side dish with pork or chicken. Ideal as a salad, drizzled with a Japanese dressing, for hot summer days!
