Konbu (also spelled kombu), refers to a collection of brown, flat, edible seaweed of the kelp genus. Kombu is one of the main ingredients in dashi broth.
Kombu is also used to facilitate the cooking of legumes (beans, etc...) and especially for its ability to enhance the flavour of food due to its natural glutamate.
