Fukujinzuke? Quite simply a pickled vegetable condiment very often presented in a curry dish.

Fukujinzuke with its 7 vegetables takes its name from the tale of the 7 deities of happiness Shichi Fukujin.

The original recipe brings together, daikon radish, aubergine, renkon lotus root, ginger, cucumber, shiitake and white beans, first finely chopped and then pickled in a base flavoured with soy sauce. The result: a crunchy texture and a slightly tangy, sour flavour.
